Chicken thigh meat 200g
Carrot 1
Mushrooms 4
Lotus root 1/2
Daikon radish 1/2
Potatoes 2
Soy sauce 1 tablespoon
Mirin 1 teaspoon (sugar and white wine can be used if mirin is not available)
Salt pinch
Sugar 2 tablespoons
Mentsuyu 2 tablespoons
Ginger as needed
Water 200ml

Cut vegetables into bite-sized pieces
Put oil and ginger in a pan and fry carrots, chicken, daikon radish, lotus root, potatoes, and mushrooms in that order.
Add seasonings and water and bring to a boil.
Skim off the scum and adjust the flavor.
Close the lid and evaporate the water to finish.
